Ingredients

The following ingredients have 4 Servings
  • 2 tomatoes
  • 1/4 cup whole wheat bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 tsp Italian seasoning
  • 4 tsp Dijon mustard

Instruction

  • Cut tomatoes in half. Turn cut side down onto a paper towel lined plate and let sit for about 10 minutes.
  • Preheat broiler. Stir together bread crumbs, Parmesan, and Italian seasoning. Set aside.
  • Turn the tomatoes cut side up and put on a baking sheet {I like to line the baking sheet with foil for easier clean-up}. Spread each tomato with a teaspoon of Dijon mustard. Sprinkle bread crumb-cheese mixture over each tomato half.
  • Broil for about 3-4 minutes, watching carefully so bread crumbs don't burn.
