Ingredients
The following ingredients have 2 Servings
- 1/2 pound broccoli (chopped)
- 1 teaspoon olive oil
- 2 tablespoons minced onion
- 1 can cannellini beans (rinsed and drained)
- 1/4 cup chopped fresh dill
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instruction
- Steam broccoli over a pot of boiling water until bright green and tender, about 3-5 minutes. Set aside.
- In a large skillet, heat olive oil over medium. Add onions and saute 2 minutes.
- Add beans and cook about 2 minutes, then add broccoli and dill and stir to combine.
- Stir in lemon juice, salt, and pepper. Taste and adjust seasoning, and serve.
- Serve warm, room temperature, or store in the fridge and enjoy cold.
