Ingredients

The following ingredients have 2 Servings
  • 1/2 pound broccoli (chopped)
  • 1 teaspoon olive oil
  • 2 tablespoons minced onion
  • 1 can cannellini beans (rinsed and drained)
  • 1/4 cup chopped fresh dill
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instruction

  • Steam broccoli over a pot of boiling water until bright green and tender, about 3-5 minutes. Set aside.
  • In a large skillet, heat olive oil over medium. Add onions and saute 2 minutes.
  • Add beans and cook about 2 minutes, then add broccoli and dill and stir to combine.
  • Stir in lemon juice, salt, and pepper. Taste and adjust seasoning, and serve.
  • Serve warm, room temperature, or store in the fridge and enjoy cold.
