Ingredients
The following ingredients have 6 Servings
- 3 cups broccoli florets
- 3 cloves garlic (chopped)
- 2/3 cup walnuts (toasted, chopped)
- 1/2 cup fresh Parmesan
- 1/4 cup fresh lemon juice
- 1 cup loosely packed fresh basil
- 1/2 cup low-fat ricotta cheese
- 1/3 cup EVOO
- salt and pepper to taste
Instruction
- Steam broccoli for a few minutes until it is bright green but not too soft. Plunge in an ice bath to stop cooking. Remove and pat with a paper towel to dry. Purée in a blender or food processor with the remainder of the ingredients.
- Serve with fresh veggies, pita bread, or chips!
