Ingredients
The following ingredients have 8 Servings
- ½ box Barilla ProteinPLUS Penne Pasta (cooked according to package directions)
- 1 c. diced raw broccoli
- 1 c. diced apple
- ½ c. dried cranberries
- ½ c. cooked and crumbled bacon
- ½ c. mayonnaise (I prefer the light kind)
- ½ c. plain Greek yogurt
- ¼ c. sugar
- ½ tsp. Kosher salt
- 1 tsp. Dried mustard
- ½ tsp. Cracked black pepper
- 2 T. red wine vinegar
Instruction
- Prepare Barilla ProteinPLUS Penne Pasta according to package instructions and set aside. I love that this pasta has 17 grams of protein which helps fuel my family's busy and active lifestyle! Even though that busy and active lifestyle doesn’t include cleaning up after themselves!
- Dice broccoli and apples, into little pieces. Crumble cooked bacon. Set aside.
- Mix Greek yogurt, light mayo, red wine vinegar, dry mustard, pepper, salt, and sugar together until smooth and creamy.
- Add veggies, bacon, and dried cranberries to Greek yogurt sauce. Toss.
- This salad is best when it’s served immediately. However, I do some of the prep work ahead of time. I like to boil the pasta, cook and crumble the bacon, and dice the broccoli ahead of time. I also like making the sauce ahead of time, just be sure to keep it separate from the rest of the ingredients.
