Ingredients
The following ingredients have 4 Servings
- 4 large eggs
- 3 tbsp fat free yogurt
- Salt and Black Pepper to season
- 2 tbsp olive oil
- 100 g broccoli florets (chopped)
- 2 spring onions (finely chopped)
- 1/2 red pepper ( chopped into small chunks)
- 25 g frozen peas
- 75 g reduced fat feta (broken into small pieces)
Instruction
- Pre-heat grill on medium heat, shelf in upper position, but not too close to the heat.
- Break the eggs into a medium mixing bowl, whisk eggs, add the yogurt and beat together well, then season with salt and pepper.
- Gently heat the oil in a shallow pan*.
- Add the chopped broccoli, spring onions and red pepper and sauté for about 3 minutes until soft.
- Stir in the peas and feta.
- Pour eggs mixture into the pan and distribute it around the bottom of the pan to cover all the vegetables.
- Cook the frittata without stirring for about 5 minutes until the bottom is firm and light brown. Do not allow to burn.
- Place the pan under the grill for 2 – 3 minutes until the frittata is fully set.
- Allow to cool a little before removing and cutting into individual slices with a rubber spatula to serve.
