Ingredients

The following ingredients have 4 Servings
  • 1 broccoli head (cut into small florets)
  • 6 to 8 bacon slices (cooked and chopped)
  • 4 eggs (hard-boiled and chopped)
  • 2 green onions (sliced)
  • 1/4 cup almond slices
  • 1/2 tsp. paprika
  • 3/4 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. fresh lemon juice
  • Sea salt and freshly ground black pepper

Instruction

  • Bring water to a boil in a saucepan.
  • Add the broccoli and cook for 5 to 6 minutes, just until the broccoli is tender-crisp.
  • Drain broccoli and place in a salad bowl.
  • In a small bowl, whisk together the mayonnaise, olive oil, apple cider vinegar, lemon juice, paprika, and season to taste.
  • Add the green onions, bacon slices, and eggs into the salad bowl with the broccoli.
  • Pour the mayonnaise mixture over the salad and gently toss everything until well-coated.
  • Serve topped with sliced almonds.
