Ingredients
The following ingredients have 4 Servings
- 1 broccoli head (cut into small florets)
- 6 to 8 bacon slices (cooked and chopped)
- 4 eggs (hard-boiled and chopped)
- 2 green onions (sliced)
- 1/4 cup almond slices
- 1/2 tsp. paprika
- 3/4 cup mayonnaise
- 1/4 cup olive oil
- 2 tbsp. apple cider vinegar
- 2 tbsp. fresh lemon juice
- Sea salt and freshly ground black pepper
Instruction
- Bring water to a boil in a saucepan.
- Add the broccoli and cook for 5 to 6 minutes, just until the broccoli is tender-crisp.
- Drain broccoli and place in a salad bowl.
- In a small bowl, whisk together the mayonnaise, olive oil, apple cider vinegar, lemon juice, paprika, and season to taste.
- Add the green onions, bacon slices, and eggs into the salad bowl with the broccoli.
- Pour the mayonnaise mixture over the salad and gently toss everything until well-coated.
- Serve topped with sliced almonds.
