Ingredients
The following ingredients have 4 Servings
- 2 heads broccoli (chopped)
- 3 tbsp butter (unsalted)
- 1 yellow onion (chopped)
- 2 cloves garlic (minced)
- 1/4 cup flour
- 2 cups milk
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp salt
- 1 tsp pepper
- 8 oz cheddar cheese (shredded)
- 40 club crackers (crushed)
- 2 tbsp parsley
Instruction
- Preheat the oven to 350F
- Steam the broccoli
- Melt butter in a large stockpot over medium-high heat
- Add the onion and cook for about 5 minutes, stirring occasionally
- Add the garlic and cook another minute
- Whisk in the milk and cook for about 2 minutes, until thickened, stirring often
- Reduce the heat to medium and whisk in the mayonnaise, mustard, salt, and pepper
- Whisk in the cheese until it’s melted and smooth
- Add the broccoli and stir until coated
- Pour all of the cheese-covered broccoli into a large baking dish
- Bake for about 1 hour, until hot and bubbly
- Remove from the oven and spread the crushed crackers over the casserole
- Set the oven to broil on low and broil for 2-3 minutes, until the crackers are brown
- Let cool for about 10 minutes
- Garnish with parsley and serve warm
