Ingredients
The following ingredients have 12 Servings
- 1/2 lb Bacon (cooked diced)
- 6 Eggs (whisked)
- 1 Cup baby Spinach (fresh, chopped)
- 1/2 Sweet bell pepper (chopped)
- 1 Cup mozzarella (shredded)
- 1/2 teaspoon salt
- 1/4 teaspoon Pepper
- 1.5 Cups Cheddar (shredded)
- 12 pack of dinner rolls or Hawaiian sweet rolls
- 1/4 Cup Butter (melted)
- 2 Tablespoons butter
- 1 Tablespoon sesame seeds
- ½ teaspoon garlic powder
Instruction
- Preheat oven to 350 degrees F. In a bowl, combine the bacon, spinach, sweet pepper, salt and pepper. Mix well. Add the whisked eggs to the bacon mixture and combine thoroughly. Stir in mozzarella cheese.
- Pour into a 9 x 13 baking dish lined with parchment paper. Pour the mixture into the baking dish.
- Bake for approximately 20 – 25 minutes or until the egg is cooked completely. Remove from oven and let cool slightly. Do not turn off oven.
- Slice the buns horizontally, leaving them all intact. Butter the buns. Place the egg mixture on top of the buns, all in one “sheet”. Sprinkle the shredded cheddar on top of the eggs.
- Replace the top portion of the buns. In a bowl, mix the melted butter and garlic powder. Brush over the tops of the buns and sprinkle with sesame seeds.
- Bake for approximately 5-6 minutes or until the cheese melts.
