Ingredients

The following ingredients have 2 Servings
  • 1/2 cup(s) bulk turkey sausage (i like jennie o), crumbled (can use regular pork sausage, i prefer turkey)
  • 4 - eggs. lightly beaten
  • 1/4 cup(s) low fat milk
  • 1/8 teaspoon(s) each of salt and pepper
  • 1/8 teaspoon(s) dry mustard
  • 1 cup(s) hashbrowns, (i make my own, but can use plain hashbrowns from frozen section)
  • 1 - green onion, sliced
  • 1/2 medium tomato, chopped
  • 2 tablespoon(s) green bell pepper, fine dice
  • 2 tablespoon(s) parmesan cheese
  • 2 tablespoon(s) heaping shredded low fat cheddar cheese or low fat colby

Instruction

  • Heat oven to 350°F.
  • In a small skillet, brown sausage and drain. (you can also do this in the oven per directions).
  • In a small bowl, beat egg, milk, and seasonings. Set aside.
  • In an electric skillet, spray with butter flavored non-stick spray and cook hash browns till they become crispy. Spray 2 ramekins with non stick spray and evenly place 1/2 of the hashbrowns in a greased 8-9 oz. custard cup. Gently tap down the hash browns. Top with sausage green peppers, tomato and onion. Pour egg mixture over top. Sprinkle with cheeses.
  • Bake, uncovered for 30-35 min or until knife inserted near center comes out clean. Let stand for 10 minutes.
