The following ingredients have 4 Servings
- 1 New York Bakery Co Cheese Bagel
- 1/4 red pepper
- 1 spring onion
- 1 slice of ham
- 2 large eggs
- salt & pepper
Instruction
- Preheat your oven to 190°C (Gas mark 5/375°F).
- Start by splitting the bagel into two equal pieces.
- With your fingers, carefully pull out a ring of soft bread from each bagel half (see video above for a detailed look at how to do this). Make sure there are no holes into the outside of the bagel – if you accidentally rip it, plug the hole by pressing back in a little of the bread.
- Place the two bagel halves onto a baking tray lined with grease-proof paper.
- Prepare the fillings – finely chop the pepper, wash and finely slice the spring onion, cut the ham into small pieces.
- Sprinkle the fillings into each bagel half, spreading them equally between the two halves.
- In a small jug or glass, whisk the eggs up with the salt and pepper.
- Pour the whisked egg over the toppings in each bagel, splitting the mixture evenly between the two halves. Don’t worry if you accidentally pour some of the egg into the centre of the bagel – the egg will puff up during cooking.
- Pop the bagels into the oven and bake for 15-20 minutes until the egg is puffed up, set and cooked through.
- Serve warm or cool quickly and store in the fridge to be eaten later or packed in a lunch box.
