Ingredients
The following ingredients have 4 Servings
- 1 tablespoon olive oil
- 4 boneless pork chops, (1 inch thick)
- salt and pepper
- 1 large egg, (well beaten)
- ⅓ cup almond flour ((see recipe notes for substitutions))
- ⅓ cup grated Parmesan
- 1 tablespoon dried parsley
- ½ teaspoon garlic powder
- ½ teaspoon seasoned salt
- ⅛ teaspoon ground black pepper
- (optional) lemon wedges, (for serving)
Instruction
- Preheat an oven to 425°F. For best results, drizzle olive oil in a large cast iron skillet and place in the oven while it's preheating. Alternatively, grease a baking sheet with olive oil and place it in the oven for at least 10 minutes to get hot. This creates a nice sear on the pork.
- Lightly season the pork chops with salt and pepper. In a small shallow bowl, place the beaten egg. In another shallow bowl mix together the almond flour, parmesan cheese, parsley, garlic powder, seasoned salt, and pepper.
- Dip a pork chop in the egg and then coat both sides with the almond flour / parmesan breading. Transfer it to the hot cast iron skillet or baking sheet. Repeat with remaining pork chops.
- Bake the pork for 15-17 minutes, flipping halfway through. The pork is done when the internal temperature reaches 145°F. Let it rest for 5 minutes before serving with optional lemon wedges.
