Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon olive oil
  • 4 boneless pork chops, (1 inch thick)
  • salt and pepper
  • 1 large egg, (well beaten)
  • ⅓ cup almond flour ((see recipe notes for substitutions))
  • ⅓ cup grated Parmesan
  • 1 tablespoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon seasoned salt
  • ⅛ teaspoon ground black pepper
  • (optional) lemon wedges, (for serving)

Instruction

  • Preheat an oven to 425°F. For best results, drizzle olive oil in a large cast iron skillet and place in the oven while it's preheating. Alternatively, grease a baking sheet with olive oil and place it in the oven for at least 10 minutes to get hot. This creates a nice sear on the pork.
  • Lightly season the pork chops with salt and pepper. In a small shallow bowl, place the beaten egg. In another shallow bowl mix together the almond flour, parmesan cheese, parsley, garlic powder, seasoned salt, and pepper.
  • Dip a pork chop in the egg and then coat both sides with the almond flour / parmesan breading. Transfer it to the hot cast iron skillet or baking sheet. Repeat with remaining pork chops.
  • Bake the pork for 15-17 minutes, flipping halfway through. The pork is done when the internal temperature reaches 145°F. Let it rest for 5 minutes before serving with optional lemon wedges.
