Ingredients
The following ingredients have 8 Servings
- 1.5 pounds potatoes ((yellow or red))
- 8 slices sandwich bread ((I used whole wheat white bread, but regular white bread would be fine and is what is traditionally used))
- 3/4 cup chickpea flour ((besan))
- 1/4 tsp turmeric
- 1/2 tsp cayenne
- 1 tsp chaat masala
- Salt to taste
- 1/4 to 1/2 cup vegetable oil ((for frying))
- 15 dates ((make sure they're pitted))
- 1 tbsp tamarind pulp
- 1/4 tsp cayenne
- 1 tsp cumin ((lightly toasted))
- Salt to taste
- 1/2 cup water
- 1/4 cup cilantro
- 1/4 cup mint leaves
- 1/2 small jalapeno pepper ((deseeded))
- 2 cloves garlic
- 2-3 tbsp water
- 2 tbsp lemon juice
- Salt to taste
Instruction
- Cook the potatoes in the microwave in a bowl of water, or on the stovetop by covering with water, until they are fork-tender. When cool enough to handle, drain the potatoes and coarsely mash them with a fork.
