Ingredients

The following ingredients have 8 Servings
  • 1.5 pounds potatoes ((yellow or red))
  • 8 slices sandwich bread ((I used whole wheat white bread, but regular white bread would be fine and is what is traditionally used))
  • 3/4 cup chickpea flour ((besan))
  • 1/4 tsp turmeric
  • 1/2 tsp cayenne
  • 1 tsp chaat masala
  • Salt to taste
  • 1/4 to 1/2 cup vegetable oil ((for frying))
  • 15 dates ((make sure they're pitted))
  • 1 tbsp tamarind pulp
  • 1/4 tsp cayenne
  • 1 tsp cumin ((lightly toasted))
  • Salt to taste
  • 1/2 cup water
  • 1/4 cup cilantro
  • 1/4 cup mint leaves
  • 1/2 small jalapeno pepper ((deseeded))
  • 2 cloves garlic
  • 2-3 tbsp water
  • 2 tbsp lemon juice
  • Salt to taste

Instruction

  • Cook the potatoes in the microwave in a bowl of water, or on the stovetop by covering with water, until they are fork-tender. When cool enough to handle, drain the potatoes and coarsely mash them with a fork.
