  • 5 ounces all purpose flour, (plus more for dusting (approximately 1 cup) )
  • 1/2 teaspoon kosher salt
  • 3 ounces unsalted butter, (chopped and cold)
  • 3 tablespoons cold water
  • 2 medium acorn squash
  • 1 tablespoon unsalted butter, (softened)
  • 3 large eggs
  • 3/4 cup packed dark brown sugar ((6 ounces) )
  • 1/2 teaspoon kosher salt
  • 1 tablespoon pumpkin pie spice; (I recommend Penzy’s, or you can make your own)
  • 1 cup half-and-half ((or 1/2 cup heavy cream + 1/2 cup whole milk))
  • 3 tablespoons brandy
