Ingredients

The following ingredients have 4 Servings
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 small sweet onion, halved, thinly sliced crosswise
  • 4 ounces mixture of your favorite mushrooms; I used a mix of shiitake and oyster
  • 1 teaspoon fresh thyme leaves from 5-6 sprigs
  • 1 teaspoon minced Italian flat-leaf parsley, leaves only
  • Pinch of sugar
  • Sea salt
  • Freshly ground black pepper
  • 1 cup red wine (young, full-bodied and easy drinking - I used a Chilean Cab)
  • 4-5 sprigs fresh thyme
  • 2 cloves garlic, crushed with the flat side of a large knife
  • 3/4 cup chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup beef broth from a concentrated paste (that is what I had on hand, can also use beef stock)
  • 1 tablespoon unsalted butter
  • 1 1/2 pounds best ground beef you can find (85-90% lean), preferably grass-fed
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 1/4 cup semi-firm, crumbly, rich blue cheese such as Gorgonzola or Roquefort (for a really decadent burger, you could also use Spanish Cabrales - it is so rich and so good but it can also easily overpower your burger so make sure you distribute it well. It is al
