Ingredients

The following ingredients have 4 Servings
  • 15ml (1 tbsp) coconut oil
  • 2 bunches spring onions, trimmed and cut into 10cm (4in) segments
  • 4 bok choy, roots trimmed and quartered lengthwise
  • 4 garlic cloves, crushed
  • 2.5cm (1in) fresh ginger root, peeled and grated
  • 1g (½ tsp) dried chilli flakes
  • 1 lime, juiced

Instruction

  • Heat the oil in a pan, then fry the spring onions for 1 minute over a medium-high heat. 
  • Add the bok choy, garlic, ginger and ginger, and stir fry for 2 minutes.
  • Add the chilli flakes and lime juice. Give it a stir and serve immediately. Enjoy!
