The following ingredients have 20 Servings
- 3 large eggs
- ½ cup unsweetened applesauce
- ½ cup canola or vegetable oil
- 1 Tbsp vanilla extract
- 1½ cups granulated white sugar
- 2 cups shredded zucchini
- 3 cups all-purpose flour
- 1 Tbsp ground cinnamon
- 1 tsp baking powder
- 1 tsp salt
- ¼ tsp baking soda

In a separate medium bowl, whisk together the flour, cinnamon, baking powder, salt and baking soda. Place the blueberries in a bowl, add a tablespoon of the flour mixture and toss.
