Ingredients
The following ingredients have 4 Servings
- 1 1/2 cups oat flour
- 1 cup old fashioned oats
- 2 teaspoon tsp cinnamon
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut oil
- 1/2 cup plain nonfat Greek yogurt
- 1/2 cup coconut sugar or agave or honey
- 1/4 cup liquid egg whites or 2 eggs beaten
- 1/2 cup applesauce
- 1/2 teaspoon vanilla
Instruction
- Preheat oven to 350 degrees, and grease two loaf pans.
- In a large bowl, mix by hand flour, oats, salt, cinnamon, and baking powder. Set aside.
- In a different bowl, mix the oil, sugar, eggs,applesauce, yogurt, and vanilla,
- Stir the wet ingredients into the dry ingredients and stir until just combined.
- Add 1 cup of fresh or frozen blueberries and fold gently until blended.
- Divide batter between the two loaf pans.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
