Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups oat flour
  • 1 cup old fashioned oats
  • 2 teaspoon tsp cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil
  • 1/2 cup plain nonfat Greek yogurt
  • 1/2 cup coconut sugar or agave or honey
  • 1/4 cup liquid egg whites or 2 eggs beaten
  • 1/2 cup applesauce
  • 1/2 teaspoon vanilla

Instruction

  • Preheat oven to 350 degrees, and grease two loaf pans.
  • In a large bowl, mix by hand flour, oats, salt, cinnamon, and baking powder. Set aside.
  • In a different bowl, mix the oil, sugar, eggs,applesauce, yogurt, and vanilla,
  • Stir the wet ingredients into the dry ingredients and stir until just combined.
  • Add 1 cup of fresh or frozen blueberries and fold gently until blended.
  • Divide batter between the two loaf pans.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
