The following ingredients have 4 Servings
- 2 cups (1 pint) vanilla bean ice cream, softened
- 1 1/2 cups SELF-RISING Flour
- 1 cup frozen blueberries
- 1/4 cup light brown sugar
- 1/4 cup pecan chips
- 2 tablespoons salted butter, melted
Instruction
- Preheat oven to 350 degrees F. Grease a 5x9-inch loaf pan and set aside.
- In a large bowl, beat together the softened ice cream and self-rising flour until well combined.
- Fold in 3/4 cup of blueberries and pour into the prepared loaf pan.
- Sprinkle the top of the batter with the remaining blueberries, brown sugar, and pecans. Then drizzle the melted butter over the top.
- Bake for 45 to 50 minutes until golden brown and a toothpick comes clean from center.
