Ingredients

The following ingredients have 4 Servings
  • 2 cups (1 pint) vanilla bean ice cream, softened
  • 1 1/2 cups SELF-RISING Flour
  • 1 cup frozen blueberries
  • 1/4 cup light brown sugar
  • 1/4 cup pecan chips
  • 2 tablespoons salted butter, melted

Instruction

  • Preheat oven to 350 degrees F. Grease a 5x9-inch loaf pan and set aside. 
  • In a large bowl, beat together the softened ice cream and self-rising flour until well combined. 
  • Fold in 3/4 cup of blueberries and pour into the prepared loaf pan.
  • Sprinkle the top of the batter with the remaining blueberries, brown sugar, and pecans. Then drizzle the melted butter over the top. 
  • Bake for 45 to 50 minutes until golden brown and a toothpick comes clean from center.
