Ingredients
The following ingredients have 4 Servings
- 2 cups Rainier blueberries
- 2 eggs (beaten)
- 1/2 cup brown sugar
- 1 cup cornmeal
- 1 cup flour
- 1 1/4 cup buttermilk
- 1/2 cup canola oil
- 1/3 cup Greek yogurt {I used honey vanilla}
- 1/2 tsp salt
- 1 tbsp baking powder
- 2 tbsp honey
Instruction
- Preheat oven to 350 degrees.
- Spray an 8X8 baking dish.
- In a large bowl add flour, brown sugar, cornmeal, baking powder, and salt. Mix well.
- In another large bowl add eggs,buttermilk, oil, and yogurt.
- Whisk together until smooth.
- Pour the dry ingredients into the wet ingredients and whisk well.
- Add half the blueberries and gently fold in the batter.
- Pour into the baking dish.
- Sprinkle on the remaining berries.
- Drizzle honey over the top of the batter.
- Bake for 35 minutes or until cooked through.
- Cut into squares and serve warm with honey butter.
