Ingredients

The following ingredients have 4 Servings
  • 3 Tbsp Oat flour ((20g) Gluten free if needed)
  • 3 Tbsp Non-GMO Cornstarch ((24g))
  • 1 tsp Baking powder
  • Pinch of salt
  • 1/4 Cup Two Good Blueberry Greek Lowfat Yogurt (+ Rest of the container for topping)
  • 1 Large egg
  • 1/2 Tbsp Fresh lemon juice
  • 1 tsp Honey (+ additional for topping)
  • 1/2 tsp Lemon zest, (packed (about 1 lemon))
  • Fresh blueberries, (for topping)
  • Bee pollen, (for topping (optional))

Instruction

  • Whisk together the flour, cornstarch, baking powder and salt in a small bowl.
  • In a medium bowl, whisk together the yogurt, egg, lemon juice, honey and lemon zest. Add in the dry ingredients and whisk until combined.
  • Heat your waffle iron up to the highest setting. Spray with cooking spray and pour half the batter into the iron (about a heaping 1/2 cup) cook until the waffle iron stops steaming. If you want your waffles EXTRA crispy, you can cook them for 2 cycles of the waffle iron.
  • Top with the rest of the yogurt, blueberries, bee pollen (optional) and a drizzle of honey.
