Ingredients
The following ingredients have 4 Servings
- 1 large loaf Italian or French bread (cut into one-inch pieces)
- 8 eggs
- 2 ½ cups milk
- Juice of one lemon
- 1/3 cup sugar
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1 cup frozen blueberries tossed with 1 tablespoon flour
- 4 ounces cream cheese (cubed)
- Powdered sugar for topping (optional)
Instruction
- Preheat oven to 375 degrees.
- Prepare a 9x13 baking dish by greasing with butter or nonstick cooking spray.
- In a large bowl, whisk together the eggs, milk, lemon juice, sugar, cinnamon, vanilla, and salt. Set aside.
- Spread half the cubed bread over the bottom of the baking dish.
- Top with half the egg mixture, half the blueberries, and half the cubed cream cheese.
- Spread the remaining cubed bread in the baking dish.
- Top with remaining eggs, blueberries and cream cheese.
- Cover and bake in preheated oven for 30 minutes.
- Then, remove the cover and bake an additional 20 to 30 minutes, until the bread has browned.
- Remove from oven and spread the melted cream cheese over the top of the casserole.
- Sprinkle powdered sugar over the top of casserole before serving.
