Ingredients

The following ingredients have 4 Servings
  • 1 large loaf Italian or French bread (cut into one-inch pieces)
  • 8 eggs
  • 2 ½ cups milk
  • Juice of one lemon
  • 1/3 cup sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 cup frozen blueberries tossed with 1 tablespoon flour
  • 4 ounces cream cheese (cubed)
  • Powdered sugar for topping (optional)

Instruction

  • Preheat oven to 375 degrees.
  • Prepare a 9x13 baking dish by greasing with butter or nonstick cooking spray.
  • In a large bowl, whisk together the eggs, milk, lemon juice, sugar, cinnamon, vanilla, and salt. Set aside.
  • Spread half the cubed bread over the bottom of the baking dish.
  • Top with half the egg mixture, half the blueberries, and half the cubed cream cheese.
  • Spread the remaining cubed bread in the baking dish.
  • Top with remaining eggs, blueberries and cream cheese.
  • Cover and bake in preheated oven for 30 minutes.
  • Then, remove the cover and bake an additional 20 to 30 minutes, until the bread has browned.
  • Remove from oven and spread the melted cream cheese over the top of the casserole.
  • Sprinkle powdered sugar over the top of casserole before serving.
