Ingredients

The following ingredients have 4 Servings
  • 1 1/4 cup of flour
  • 1 stick butter, softened
  • 1 egg
  • 1 lemon for zest and juice
  • 1 teaspoon vanilla
  • 3/4 cups brown sugar
  • 1 bag (11 oz) Nature Valley™ protein granola Oats ‘N Honey
  • 1 jar blackberry jam
  • 16 oz ounces of blueberries (fresh or frozen)
  • 3 tablespoon cornstarch
  • 1/4 cup honey or brown sugar

Instruction

  • Preheat oven to 350°F. In a large bowl or stand mixer, beat together flour, butter, egg, lemon zest, brown sugar and vanilla until smooth. Add granola and mix well. Press 3/4 of the mixture into the bottom of a 9 x 13 parchment-lined baking dish.
  • In a large bowl, stir together jam, blueberries, cornstarch, honey and lemon juice from one lemon. Spread this mixture on top of the granola.
  • Sprinkle remaining granola mixture across the top.
  • Bake for 40-45 minutes, or until the edges begin to turn a light golden brown. Cool completely before slicing.
