Ingredients
The following ingredients have 4 Servings
- 1 1/4 cup of flour
- 1 stick butter, softened
- 1 egg
- 1 lemon for zest and juice
- 1 teaspoon vanilla
- 3/4 cups brown sugar
- 1 bag (11 oz) Nature Valley™ protein granola Oats ‘N Honey
- 1 jar blackberry jam
- 16 oz ounces of blueberries (fresh or frozen)
- 3 tablespoon cornstarch
- 1/4 cup honey or brown sugar
Instruction
- Preheat oven to 350°F. In a large bowl or stand mixer, beat together flour, butter, egg, lemon zest, brown sugar and vanilla until smooth. Add granola and mix well. Press 3/4 of the mixture into the bottom of a 9 x 13 parchment-lined baking dish.
- In a large bowl, stir together jam, blueberries, cornstarch, honey and lemon juice from one lemon. Spread this mixture on top of the granola.
- Sprinkle remaining granola mixture across the top.
- Bake for 40-45 minutes, or until the edges begin to turn a light golden brown. Cool completely before slicing.
