Ingredients

The following ingredients have 1 Servings
  • 2 cups blueberries
  • 2 tbsp lemon juice
  • 1/3 cup fresh basil leaves, (finely chopped)
  • 2 tbsp low-carb granulated sweetener, (such as monkfruit with erythritol or Swerve )
  • 2 tbsp chia seeds
  • 1 - 2 tsp jalapeño pepper, (finely minced)

Instruction

  • Slightly mash blueberries with lemon juice, basil and optional jalapeño in a medium saucepan over medium heat. Bring to a boil, then simmer just until the berries have softened.
  • Remove from heat and stir in the sweetener and chia seeds. Let stand for 10 - 15 minutes or so until the chia has swelled and thickened the berry mixture.
  • Transfer to sterilized jars.
  • Store covered in the refrigerator for up to a week, or freeze in air-tight containers.
