Ingredients
The following ingredients have 4 Servings
- 1/2 cup blueberries
- 1/2 cup unsweetened coconut milk
- 1 20 ounce can pineapple chunks with juice
- 2 tablespoons Nutiva - Organic Coconut Manna or fresh unsweetened coconut
- 2 tablespoons fresh basil (finely minced)
- 1 medium banana (peeled)
- 1 cup ice (see note)
Instruction
- In a blender, puree the blueberries, coconut milk, pineapple chunks AND their juice and the coconut manna (or unsweetened coconut) until smooth.
- If you are using frozen herb ice cubes, drop in 2-4 cubes. If you are using fresh basil, drop in 2 tablespoons.
- Add 1 frozen banana (unless using fresh) and blend until smooth. (if using non-frozen banana - add 1 cup of ice and blend until smooth).
- I did not add anything else to sweeten because the banana is sweet enough, but if you need something more, add 1 tablespoon of honey and blend.
