Ingredients

The following ingredients have 4 Servings
  • 3 Tbsps olive oil
  • 2 Tbsps fresh lime juice
  • 1 tsp mustard
  • 1/2 Tbsp sugar
  • kosher salt, pepper
  • 3 hearts of romaine lettuce (chopped)
  • 1 pound bacon (cooked and crumbled)
  • 1 can corn (drained)
  • 6 oz crumbled feta cheese
  • 1 pint cherry or grape tomatoes (cut in half)
  • 1 large avocado (diced)

Instruction

  • In a small bowl combine olive oil, lime juice, sugar, mustard, kosher salt, and pepper. Whisk together and taste for seasoning. Add more lime, salt, or pepper according to taste. Set the dressing aside.
  • In a large bowl combine lettuce, bacon, corn, feta, tomato halves, and avocado. Toss until evenly mixed. Serve with the lime dressing on the side.
  • If there is some left, place into containers and keep in the fridge for up to two days. Store leftover dressing in the fridge as well.Note: Avocado will brown, remove avocado if you are storing leftovers.
