Ingredients

The following ingredients have 4 Servings
  • 1 pound bacon
  • 1/2 red onion
  • 4 cups mixed greens
  • 1 cup cherry tomatoes (cut in half)
  • 1 cup Colby-Jack cheese (shredded)
  • Avocado Ranch Dressing (to taste)

Instruction

  • Place a large skillet over medium heat. Cook bacon until crispy, flipping as needed. Transfer to a paper towel-lined plate to drain. Once cool enough to handle, chop the bacon into small pieces.
  • Dice or chop the red onion. Run the onion pieces under cool water for 1 minute and then pat dry with a paper towel.
  • Place the lettuce in a large serving bowl. Top with bacon, onion, tomatoes, and cheese. Toss together.
  • When ready to serve, top the salad with dressing and toss again.
