Ingredients

The following ingredients have 4 Servings
  • 1 cup halved grape tomatoes
  • 1 avocado, diced
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon red wine vinegar
  • 4 large eggs
  • 1/4 cup mayonnaise
  • 4 slices sourdough or other hearty sandwich bread, brushed with olive oil and grilled until toasted (or if you MUST, you can put them in the toaster!)
  • 2 cups baby lettuce
  • 4 thick bacon slices, cooked

Instruction

  • Combine tomatoes, avocado, parsley, salt and pepper, olive oil and red wine vinegar in a small bowl.
  • Fill a large deep skillet with water and bring to a simmer. Break each egg into a separate small bowl or teacup and slip into the water. Cover immediately, remove from heat and let sit for 4-5 minutes, depending upon how firm you like your poached egg. Remove with a slotted spoon.
  • Spread mayonnaise on one side of each bread slice. Layer each with 1/2 cup lettuce, 2 bacon slices, some of the tomato mixture and one egg. Top with remaining tomato mixture and serve at once.
