Ingredients
The following ingredients have 4 Servings
- 1 cup halved grape tomatoes
- 1 avocado, diced
- 1 tablespoon chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon red wine vinegar
- 4 large eggs
- 1/4 cup mayonnaise
- 4 slices sourdough or other hearty sandwich bread, brushed with olive oil and grilled until toasted (or if you MUST, you can put them in the toaster!)
- 2 cups baby lettuce
- 4 thick bacon slices, cooked
Instruction
- Combine tomatoes, avocado, parsley, salt and pepper, olive oil and red wine vinegar in a small bowl.
- Fill a large deep skillet with water and bring to a simmer. Break each egg into a separate small bowl or teacup and slip into the water. Cover immediately, remove from heat and let sit for 4-5 minutes, depending upon how firm you like your poached egg. Remove with a slotted spoon.
- Spread mayonnaise on one side of each bread slice. Layer each with 1/2 cup lettuce, 2 bacon slices, some of the tomato mixture and one egg. Top with remaining tomato mixture and serve at once.
