Ingredients

The following ingredients have 4 Servings
  • 1 pound jumbo shrimp (peeled and deveined)
  • 1 Tbsp olive oil
  • 1 Tbsp garlic paste
  • 1 Tbsp lemon juice
  • 1 1/2 Tbsps blackening seasoning (I used Emeril's)
  • 2 8 oz bags Caesar salad kits (the kits with the dressing, croutons, and cheese already included)
  • wooden kabob skewers that have been soaking in water for several hours

Instruction

  • Pat the shrimp dry with a paper towel and place them in a bowl.
  • Add the olive oil, garlic paste, lemon juice, and 1 Tbsp of the blackening seasoning. Toss until evenly coated.
  • Put the shrimp on the kabob skewers and sprinkle with the remaining blackening seasoning.
  • Grill the shrimp kabobs over medium high heat for 2-3 minutes per side.
  • Prepare the Caesar salad kits according to the package directions, toss until the dressing is evenly coated and top each salad with the blackened shrimp.
