Ingredients
The following ingredients have 6 Servings
- 2 cups old fashioned rolled oats
- 1/4 cup light brown sugar
- 1 teaspoon baking powder
- 1 tablespoon grated lemon zest
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon sea salt
- 2 cups milk
- 1 large egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 6 ounces fresh blackberries
- 1/4 cup brown sugar
- 1/4 cup butter
- 1 tablespoon water
Instruction
- Heat oven to 375 degrees F and generously spray the inside of a 2-quart baking dish with cooking spray and place on a baking sheet.
- In a large bowl, mix together the oats, sugar, baking powder, lemon zest, nutmeg and salt. Add half of the oat mixture to prepared baking dish. Arrange half of the blackberries on top. Then add the second half of the oatmeal and top with the remaining blackberries.
- In another bowl, whisk together the milk, egg, melted butter and vanilla extract. Gently shimmy/shake the baking dish to help the milk mixture go throughout the oats. Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.
- Before serving, make the caramel sauce by melting butter in a small saucepan over medium heat then add brown sugar. Cook while stirring until the sugar dissolves. Add water, stir, and then drizzle over oatmeal.
