Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon cumin
  • 14 ounces black beans (rinsed and drained)
  • 1 1/3 cups tomato juice
  • 1/2 teaspoons salt
  • 2 tablespoons chopped cilantro

Instruction

  • Heat oil over medium heat in a large pan. Add garlic and cumin and cook for a few minutes, until the garlic is fragrant.
  • Add beans, tomato juice, and salt. Cook until heated through and some of the liquid is evaporated, stirring frequently.
  • Just before serving, stir in the cilantro.
