The following ingredients have 7 Servings
  • 1 14.5-ounce can crushed fire-roasted tomatoes
  • 1/2 cup chopped red onion
  • 1 jalapeño pepper (stemmed, seeded, and chopped)
  • 3 cloves garlic (roughly chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 2 15-ounce cans black beans, rinsed and drained
  • 1 1/2 cups shredded jalapeño jack cheese (divided)
  • 1 cup vegetable broth
  • 3/4 cup cornmeal
  • 1/2 cup finely chopped red onion
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 medium poblano chile peppers (stemmed, halved and seeded)
  • Cilantro (sliced green onions, and pickled peppers for garnish (optional))
