  • 1 cup shelled walnuts
  • 2 cloves garlic
  • 3 tablespoons dry sherry
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1/8-1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 3 large porterhouse steaks ((2 inches thick))
  • 3 tablespoons fresh rosemary, (roughly chopped)
  • 2 tablespoons olive oil
  • Salt (and pepper)
  • Lemon wedges
