- 1 cup shelled walnuts
- 2 cloves garlic
- 3 tablespoons dry sherry
- 1 tablespoon tomato paste
- 2 teaspoons smoked paprika
- 1/8-1/4 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 3 large porterhouse steaks ((2 inches thick))
- 3 tablespoons fresh rosemary, (roughly chopped)
- 2 tablespoons olive oil
- Salt (and pepper)
