Ingredients
The following ingredients have 4 Servings
- 4 russet potatoes
- 4 cloves garlic, peeled
- 2 tbsp oil
- 4 tbsp butter, diced
- 4 sprigs thyme
- 1/2 cup chicken broth
- salt and pepper, to taste
Instruction
- Peel potatoes. Trim the bottoms of the potatoes. Cut the potatoes in 3rds crosswise so there should be 12 cylinders. Place cylinders in a bowl of cold water. Soak for 20 minutes to remove excess starch.
- Preheat oven to 400°. Smash garlic with a knife. Once the potatoes have soaked, heat skillet over medium high heat. Add oil. Once hot, add potatoes cut side down. Cook for 5-7 minutes until golden brown. Flip potatoes. Add garlic, thyme and chicken broth. Cook for another 2-3 minutes. Place diced butter scattered on top of potatoes.
- Bake until tender for 30-35 minutes. Serve drizzled with pan juices.
