Ingredients

The following ingredients have 4 Servings
  • 2 8 oz cream cheese bars
  • 1 cup sugar, divided
  • 1/2 tsp vanilla
  • 1/4 cup heavy cream (optional)
  • 2 6 ct. packages mini graham cracker pie crusts
  • 2 eggs
  • 1 qt fresh strawberries
  • 1 juice of lemon

Instruction

  • Wash, hull and cut strawberries in half. Place them in a small sauce pan along with 1/2 cup of sugar and juice of one lemon. Cook on med/low heat for 20 min or so until the sauce reduces and becomes a little thick.
  • Meanwhile, preheat oven to 350F.
  • In a mixing bowl, add cream cheese, eggs, 1/2 cup of sugar, vanilla and heavy cream. Mix for 2-3 minutes. Scrape sides of bowl midway through. 
  • When strawberry sauce is finished cooking, add 1/2 cup of strawberry sauce to the cream cheese mixture. Mix until combined. Scrape bowl and stir before removing. 
  • Gently pour cream cheese mixture into graham cracker pie shells. Bake in 350F for 20-25 min or until middle is set. Let cool on counter for 15 min. Place in refrigerator for 2 hours before serving. 
  • Top with strawberry sauce before serving.
