The following ingredients have 4 Servings
  • 1 8 lb. approx. fresh turkey (giblets and neck removed)
  • 1 gallon (4.5 L) cold water
  • 2 cups (480 ml) apple cider
  • 1 1/2 cup kosher salt
  • 1 cup (200 g) brown sugar
  • 10 garlic cloves
  • 1 3/4 cups (420 ml) vegetable oil
  • 3/4 cup (180 ml) orange juice
  • 3 tablespoons (45 ml) fresh lemon juice
  • 1/4 cup (60 ml) apple cider vinegar
  • 1/4 cup (60 g) kosher salt ((see notes))
  • 3 tablespoons dried oregano
  • 1 tablespoon cumin
  • 1 tablespoon coriander powder
  • 1 tablespoon onion powder
  • 3 chipotles in adobo
  • 2 tablespoons yellow pepper paste
  • 4 - 6 thin slices of orange ((optinal))
  • 4 sage leaves (, finely chopped)
