Ingredients
The following ingredients have 4 Servings
- 115 g butter
- 1/2 cup sugar
- 1 egg yolks beaten
- 1 cup self-raising flour sifted
- 1/4 tsp salt
- 1/2 cup pitted dates chopped
- 4 tbs raspberry jam
Instruction
- Cream butter and sugar in a bowl.
- Add beaten egg yolk, then sift in flour and salt.
- Roll out half the mixture to line a shallow, square cake tin.
- Spread thinly with jam, then add a layer of chopped dates.
- Place the remainder of the shortbread mixture on top.
- Bake at 150C for 35-40 minutes.
