Ingredients

The following ingredients have 4 Servings
  • 115 g butter
  • 1/2 cup sugar
  • 1 egg yolks beaten
  • 1 cup self-raising flour sifted
  • 1/4 tsp salt
  • 1/2 cup pitted dates chopped
  • 4 tbs raspberry jam

Instruction

  • Cream butter and sugar in a bowl.
  • Add beaten egg yolk, then sift in flour and salt.
  • Roll out half the mixture to line a shallow, square cake tin.
  • Spread thinly with jam, then add a layer of chopped dates.
  • Place the remainder of the shortbread mixture on top.
  • Bake at 150C for 35-40 minutes.
