Ingredients

The following ingredients have 4 Servings
  • 1 400g tin butter beans (drained)
  • 1 cooked beetroot (you can use pickled beetroot see note above)
  • 1 handful fresh mint (chopped. You can use mint sauce - see note above)
  • 1 lemon (juice of)
  • salt
  • 2 tsp white wine vinegar

Instruction

  • Tip all the ingredients into a blender/food processor/bowl and attack with a stick blender.
  • Season to taste and serve with your favourite crudités!
