  • 8 ounces button or cremini mushrooms (sliced)
  • 1 medium onion
  • 2 stalks celery (chopped)
  • 2 parsnips (peeled and cut into 1/2" pieces)

  • 2 cups red wine
  • 3 cups low sodium beef broth
  • 5 sprigs fresh thyme (tied with kitchen string)
  • 1 bay leaf
  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1/2 teaspoon salt
  • 1-2 teaspoons Browning sauce (such as Gravy Master (optional))
  • 1 cup frozen peas
