The following ingredients have 9 Servings
  • 3 pounds sirloin steak, cut into 1-inch cubes
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 6 tablespoons oil, divided
  • 7 shallots, sliced thin
  • 4 cloves of garlic, crushed and chopped
  • 1/3 cup flour
  • 2 cups Guinness (or other stout, ale, or dark beer)
  • 2 cups beef stock
  • 3 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2-1/4 cups halved baby carrots
  • 1/2 ounce dried porcini mushrooms, rinsed briefly under cold water
  • 3 large portobello mushroom caps, chopped medium
  • 1 tablespoon fresh thyme (or 1-1/2 teaspoons dried)
  • 1-1/2 cups frozen small green peas
  • Piecrust to cover 13x9-inch pan or store-bought puff pastry, cut into strips for a lattice
  • Egg wash: 1 whole egg beaten with 1 tablespoon water
