Ingredients
The following ingredients have 4 Servings
- 900 grams Stewing beef
- 3 tablespoons Oil
- 1 large Onion finely chopped
- 4 Cloves
- 4 Green cardamom pods
- 2 Green chilies finely chopped
- 1 inch Fresh root ginger finely chopped
- 2 Garlic cloves crushed
- 2 Dried red chilies
- 1 tablespoon Curry paste
- 2 teaspoons Ground coriander
- 1 teaspoon Ground cumin
- 1/2 teaspoon Salt
- 150 ml Beef stock
Instruction
- 1. Using a sharp knife, remove any visible fat and cut the meat into 1 in cubes. 2. Heat the oil in a large frying pan and fry the onion, cloves and cardamom pods for 5 minutes. Add the fresh green chillies, ginger, garlic and dried chillies and fry for a further 2 minutes. 3. Add the curry paste and fry for about 2 minutes. Add the beef and fry for 5-8 minutes, until all the meat pieces are lightly browned. 4. Add the coriander, cumin, salt and stock. Cover and simmer for 1 - 1 1/2 hours. Serve with Tomarto Rice and garnish with coriander sprigs.
