Ingredients
The following ingredients have 4 Servings
- 1 lb ground beef
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 8 large flour tortillas
- ½ cup shredded queso cheese
- ½ cup pico de gallo
- ¼ cup Sour cream
- Fresh cilantro (as garnish)
Instruction
- Brown the ground beef. Stir in chili powder, cumin, and paprika. Drain and set aside. Wash the pan and return to the stove over medium high heat.
- Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
- Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of the taco meat into one section, cheese to another, sour cream to the next, and finally pico de gallo to the last section.
- Starting with the bottom left quadrant, fold the tortilla up and over the top left, then the top right, then the bottom right.
- Add 1 tbsp olive oil to the pan. Add quesadillas and cook for 3 minutes per side.
- Remove from heat and garnish with fresh cilantro. Serve immediately and enjoy!
