Ingredients

The following ingredients have 4 Servings
  • 400g fresh egg noodles
  • 1/3 cup (80ml) soy sauce
  • 1/3 cup (80ml) oyster sauce
  • 2 tablespoons tomato sauce (ketchup)
  • 2 garlic cloves, crushed
  • 1 tablespoon grated ginger
  • 2 tablespoons rice vinegar
  • 2 bunches broccolini, ends trimmed
  • 1 tablespoon sesame oil
  • 400g lean beef mince
  • 4 spring onions, sliced on an angle, plus extra to garnish
  • Sesame seeds, to sprinkle

Instruction

  • Soak the noodles in a bowl of boiling water for 5 minutes to soften, then drain.
  • Meanwhile, mix the sauces in a bowl with the garlic, ginger and vinegar.
  • Cook broccolini in boiling salted water for 2-3 minutes until bright green and still slighty crisp. Drain and set aside.
  • Heat oil in a wok over medium-high heat. Add beef and stir-fry for 2-3 minutes until browned and cooked. Add noodles, sauce mixture, broccolini and onion and stir-fry for 1 minute to heat through. Divide among bowls, then serve sprinkled with sesame seeds and extra spring onion.
