Ingredients

The following ingredients have 4 Servings
  • 71 ozs lean Pork spare rib rack
  • 3 cloves garlic cloves (minced)
  • 0.5 cup good quality olive oil
  • salt (to taste)
  • freshly ground Black pepper (to taste)
  • 4 sprigs fresh rosemary (plus extra for garnish)

Instruction

  • Separate the ribs into individual servings (3 to 4 ribs per serving). Rinse the ribs under cold running water and pat dry with paper towels.
  • In a small bowl, mix the garlic, olive oil, salt and pepper. Pour the marinade over the ribs, coating the ribs completely. Lay the rosemary sprigs on the meat. Marinate for a least 2 hours, or over night for best results.
  • Grill the ribs slowly for about 25 minutes, turning and brushing them frequently with the marinade. Garnish with rosemary and serve.
