Ingredients
The following ingredients have 4 Servings
- 3 large poblano peppers
- 2 1/2 cups leftover pulled pork
- 1/2 cup BBQ sauce
- 1 box cornbread mix (plus ingredients to prepare according to package directions)
- Optional: more BBQ sauce drizzled over top
Instruction
- Cut the poblano peppers in half lengthwise, remove the seeds and white ribs. Lay them cut side up in a 9x13 casserole dish as flat as you can get them.
- Mix together the pulled pork and BBQ sauce. Stuff each pepper with the BBQ pulled pork.
- Prepare the cornbread batter according to package directions. Pour some batter into each pepper. The batter will settle into the pepper, so after a minute or two top each with more batter. Discard extra batter or make a few cornbread muffins with remaining batter if desired.
- Bake in a 375 degree oven for 35-40 minutes.
- Serve with more BBQ sauce on top if desired.
