Ingredients
The following ingredients have 6 Servings
- 1 tablespoon unsalted butter
- 1 cup thinly sliced red onion (1/4th of a red onion)
- 2 cups shredded chicken
- ¼ cup bbq sauce (plus more for dipping)
- ¼ cup fresh chopped cilantro (plus more for garnish)
- 1 roll crescent roll dough sheet
- 1 ½ cups shredded colby jack cheese
Instruction
- Preheat the oven to 375°F. In a medium skillet over medium heat, melt the butter. Add the onions and cook until softened, 5-8 minutes.
- Add the chicken, bbq sauce, and cilantro to the pan and mix to combine. Set aside.
- Well grease 8 sections of a muffin tin with baking spray, set aside. Roll out the crescent dough on a clean work surface and cut it into 8 even sections. Gently press each piece of the dough into one of the greased sections of the muffin tin, repeat with all the pieces.
- Taking 1/2 cup of the cheese, evenly distribute it to the bottom of each of the cups.
- Add the chicken mixture on top of the cheese.
- Top with another ½ cup of the cheese.
- Taking the corners of the crescent dough, fold them over the top so it forms a little cup.
- Top each one with the remaining cheese. Bake for 15 minutes or until golden brown.
- Garnish with optional cilantro and serve with extra bbq sauce for dipping.
