The following ingredients have 6 Servings
  • 1 pound(s) ground beef
  • 1 pound(s) ground veal
  • 1 tablespoon(s) minced onion
  • 1 tablespoon(s) minced garlic
  • - salt and pepper
  • 2 - chipotle pepper (diced)
  • 6 - buns (your preference)
  • 1 large heirloom tomato
  • 1/2 - sweet onion (sliced)
  • 6 slice(s) Gouda cheese
  • 6 slice(s) sharp cheddar cheese
  • 12 slice(s) bacon
  • 16 ounce(s) sweet BBQ sauce
  • CHIPOTLE MAYO
  • 1 cup(s) mayo
  • 1 tablespoon(s) sweet BBQ sauce
  • 1 tablespoon(s) Caribbean jerk season or sauce
  • 1 - chipotle pepper (diced)

Instruction

  • Take the ground meats and season with salt & pepper (to taste). Add the onion, garlic, and chipotle peppers.
  • Shape the meat into six 1/3 lb patties.
  • Take the patties and the bacon and place them on the grill. **I like to use a charcoal grill with pecan and applewood but a propane grill can be used also.**
  • As your meat cooks, make your mayo and slice your onion and tomato. MAYO: Take all the ingredients for the mayo and mix them together.
  • When your meat is done set it aside to rest while you toast your buns.
  • Take the bottom bun and spread on the mayo, top the mayo with a slice of Gouda and then the slice of cheddar. Add the meat, tomato, onion and spread BBQ sauce on the top bun and top off the burger.
