Ingredients
The following ingredients have 4 Servings
- 1 large chicken breast (butterflied)
- 1 medium zucchini (cut into 1/4 inch thick slices)
- 7-8 basil leaves
- 1/4 teaspoon black pepper
- 4 strips of bacon
Instruction
- On a cutting board, cover the butterflied chicken breast with a large sheet of saran wrap. Use a rolling pin or a heavy object to pound the chicken so the thickness is even throughout. Then, cut the chicken into 4 pieces.
- Sprinkle some black pepper onto the chicken. Then, put the zucchini slice and 1 or 2 basil leaves on top of each chicken and roll it up. Finally, take one strip of bacon and wrap around the chicken roll. Secure it with toothpicks if necessary.
- Place a metal steamer rack inside the fryer basket and place the wraps on the rack. Air fry at 400F (200C) for 10-12 minutes or until the internal meat temp exceeds 165F (74C).
