Ingredients
The following ingredients have 4 Servings
- 1½ cups (190 grams) all-purpose flour
- ½ teaspoon salt
- 1½ teaspoon baking soda
- 2 eggs
- 2 bananas (ripe, mashed)
- ½ cup (120 grams) yogurt
- ¼ cup (50 ml) agave syrup
- ¼ cup (50 grams) light brown sugar
- 1 teaspoon lemon juice
- 1 cup (125 grams) walnuts
Instruction
- Preheat oven to 355°F (180°C) and grease a loaf pan.
- In a bowl, combine flour with salt and baking soda. Set aside.
- In a mixing bowl, beat the eggs then add mashed bananas, yogurt, agave syrup, brown sugar, and lemon juice. Mix well until combined.
- Combine dry ingredients with wet ingredients and mix lightly with a spatula. Make sure not to over mix the batter.
- Fold in crushed walnuts and pour batter into prepared loaf pan.
- Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Make sure that the loaf is completely chilled before removing from pan and slicing.
