Ingredients

The following ingredients have 4 Servings
  • 1½ cups (190 grams) all-purpose flour
  • ½ teaspoon salt
  • 1½ teaspoon baking soda
  • 2 eggs
  • 2 bananas (ripe, mashed)
  • ½ cup (120 grams) yogurt
  • ¼ cup (50 ml) agave syrup
  • ¼ cup (50 grams) light brown sugar
  • 1 teaspoon lemon juice
  • 1 cup (125 grams) walnuts

Instruction

  • Preheat oven to 355°F (180°C) and grease a loaf pan.
  • In a bowl, combine flour with salt and baking soda. Set aside.
  • In a mixing bowl, beat the eggs then add mashed bananas, yogurt, agave syrup, brown sugar, and lemon juice. Mix well until combined.
  • Combine dry ingredients with wet ingredients and mix lightly with a spatula. Make sure not to over mix the batter.
  • Fold in crushed walnuts and pour batter into prepared loaf pan.
  • Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  • Make sure that the loaf is completely chilled before removing from pan and slicing.
