Ingredients

The following ingredients have 2 Servings
  • 2/3 cup (80 g) all-purpose flour
  • 2/3 cup (104 g) yellow cornmeal
  • 2 tablespoons (24 g) sugar
  • 1 tablespoon (12 g) baking powder
  • 1/2 teaspoon salt
  • 2 medium ripe bananas (about 200 g)
  • 2/3 cup (150 g) milk
  • 4 large eggs
  • 1/4 cup (56 g) unsalted butter, melted and slightly cooled

Instruction

  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder and salt.
  • In another bowl, mash your bananas with a fork or pastry cutter. Add the milk, eggs, and melted butter and whisk to combine.
  • Pour the wet ingredients into the dry ingredients, and stir just until combined. Do not over mix.
  • Let the mixture sit while you preheat a waffle iron until hot.
  • Cook the waffles according to the manufacturer’s instructions until all the batter has been used.
  • Serve the waffles warm.
