The following ingredients have 8 Servings
- 2 medium ripe bananas (mashed)
- 1 large egg
- 1 tablespoon vegetable oil
- 1-1/2 cups buttermilk
- 1-1/2 cups white whole wheat flour
- 1/2 cup quick-cooking oats
- 1 tablespoon coconut sugar (or brown sugar)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips
- Maple syrup for serving
Instruction
- In a large bowl, whisk mashed bananas, egg, oil, and buttermilk until smooth. In a separate large bowl, combine flour, oats, sugar, baking powder, baking soda, and salt. Gently fold dry mixture into liquid until just combined. Fold in chocolate chips.
- Cook pancakes by 1/4 cupfuls 1-1/2 to 2 minutes on each side in a nonstick skillet over medium-high heat. Serve pancakes warm with maple syrup.
